Thought i would share this yummy corn pie recipe it is a wonderful side dish recipe, I made this at home and everyone absolutely loved it,including myself. It is addictive. Making dishes like this is definitely what excites me to keep cooking and exploring in the kitchen, the end result was a trip to yummy town for me. Happy cooking and happy eating!
1 can whole corn
Water to add incase the water you drain from corn does not add up to 1 cup
1 teaspoon salt
1 teaspoon white pepper
8 tablespoon corn meal (fine)
1 egg (room temperature )
1/2 cup unsalted butter
3/4 cups bell pepper (I use green & red)
1/2 cup onions (diced)
1 cup evaporated whole milk
1 1/4 cup of shredded cheddar cheese
1 to 2 teaspoons hot pepper sauce (optional )
Preheat oven to 350 degrees F,drain the corn and reserve liquid, pour in a 1 cup measuring cup, if it does not fill the cup to a 1 cup measurement add water to make it 1 cup.
In a bowl pour liquid, egg,white pepper,salt mix well.
Add cornmeal and hot sauce to egg mixture stir to form smooth paste ,set it aside.
Add butter to a saucepan and let it melt on medium heat,adding onion and bell peppers saute till onions are translucent.
Pour in the milk,stir and bring it to a boil, when it comes to a boil add corn meal mixture immediately reduce the heat to low turning intermittently for about 4 to 5 mins.
Add whole corn and mix ,let it cook for another 5 mins until it falls away from the sides of the pot easily.
Remove pot from the heat and add 3/4 cup of cheese, Mix well.
Transfer mixture to a greased baking dish ,smooth the top sprinkle with remaining cheese (you could use more or less).
Place in the oven and bake for 30 minutes or so or until it get a nice golden color.
Remove and Serve I let mine rest about 30 mins before serving.Garnish with chopped chives or parsley.
