Trinidad Sada Roti

Sada roti is one of the most prominently featured in the diets of people in Trinidad and Tobago. This west Indian style roti is primarily made from flour, baking powder,  water and cooked on a tawah. A tawah(tawah) is a round cast iron cooking utensil people use in Trinidad to cook roti, if you do not have one at home as every trini. You can use a griddle or a pan that is wide enough to cook it. It still comes out great , I however do own one which I bought on one of my trips there in the past. Sada roti can be eaten with just about any curry, veggies, Fried ocra and the list goes on lot of people have this roti for breakfast on the island but some people have it for lunch and also dinner you can make it to have at anytime.

RECIPE

2 cup flour

2 teaspoons baking powder

11/2 cup water (approx. )

INSTRUCTIONS

Mix flour and baking powder. Add enough water to make a smooth dough; knead well.

Cover with damp towel and leave to rest for about 1/2 hour or more if you like.

Divide dough into 2 and shape in balls (loyah).

Roll ball of dough on floured surface to 1/2″ thick and about 8 round.

Cook on moderately hot tawah or griddle until it rises. Turn to other side and cook.

Toast edges over fire or heat to make sure they are cooked.

Serve hot.
